U.S. Farm-Raised Catfish Recipe Takes the Cake

(NewsUSA) - There's more to fish than grilling, poaching or baking a fillet. With a mild-flavored, sustainably raised fish like U.S. Farm-Raised Catfish, you can create multitudes of unique and flavorful meals.

Take this recipe for Oven-Baked Catfish Cakes with Lemon-Caper Sauce. The cakes provide a filling, comfort-food dish and are still fancy enough to impress guests as either an entrée or appetizer.

Oven-Baked Catfish Cakes with Lemon-Caper Sauce

Serves Four

Catfish Cakes:

1 pound U.S. Farm-Raised Catfish Fillets, cooked

1 1/2 cups mashed potatoes

1/4 cup red onion, diced

1/4 cup red bell pepper, diced

1 teaspoon fresh parsley, chopped

1 tablespoon Creole mustard

1/2 teaspoon capers, chopped

1/2 teaspoon salt

1/2 teaspoon onion powder

1/4 teaspoon hot sauce

1 cup breadcrumbs

1/4 cup olive oil

Lemon Caper Sauce:

2 tablespoons mayonnaise

1 tablespoon Creole mustard

1/4 teaspoon Cajun seasoning

1 tablespoon capers, chopped

1 teaspoon hot sauce

1 tablespoon red onion, diced

1/2 lemon, juiced

Directions:

1) Make the Lemon Caper Sauce by combining all of the ingredients and mixing them well. Set aside.

2) Preheat the oven to 350 degrees Fahrenheit.

3) Mix the catfish cake ingredients together, leaving out the olive oil and the breadcrumbs. Shape the mixture into equally sized cakes. Coat the cakes with breadcrumbs.

4) In a medium skillet, heat the olive oil over medium high heat. Cook the catfish cakes for two minutes on each side.

5) Transfer the catfish cakes to a greased baking sheet. Bake the cakes in the oven for 15 minutes.

6) Remove the catfish cakes from the oven, and place them on a serving dish. Garnish with Lemon Caper Sauce and fresh lemon wedges.
